Gogiri Makguksu is a buckwheat noodle restaurant in the hills of Yongin, south of Seoul, known for one dish above all: deulgireum makguksu, cold buckwheat noodles dressed in perilla oil and soy and buried under finely ground toasted seaweed. The flavour is quiet and nutty rather than sharp. The building is a modern take on a hanok and the setting is rural, which is part of why people make the trip. Waits are long at weekends. Regulars eat the noodles down to the last third, then ask for cold broth to be poured in.
