Jungin Myeonok serves Pyongyang-style naengmyeon in Yeouido, near the National Assembly. The style is deliberately understated: a clear, lightly salted beef broth and buckwheat-heavy noodles with a plain, nutty flavor, meant to be tasted before any vinegar or mustard is added. The dining room is bright and minimal, and it fills with office workers at lunch. Handmade mandu and suyuk, thin slices of boiled beef, are the usual sides.
