Nongmin Baekam Sundae serves sundae guk, a soup of Korean blood sausage, from a plain dining room in the Seolleung office district. The broth is pork bone, simmered long enough to turn cloudy and white, and each pot comes packed with handmade sundae, sliced pork, and offal. Tables turn over quickly and a queue at lunch is normal. Regulars stir in perilla seed powder and chopped garlic chives from the counter, then dip the meat in salted shrimp sauce.
