Seo Seo Galbi means standing galbi, and the name is literal: there are no chairs. Diners stand around oil drums converted into charcoal grills, a way of eating that goes back to older working-class Seoul. The menu is one dish, marinated beef short ribs in a sweet soy marinade, plus dipping sauce and drinks. Rice and kimchi are not sold, so regulars buy instant rice and packaged kimchi at a convenience store on the way and the staff heat them up. It closes when the day's meat runs out.
