Batter goes onto heavy irons to order, so the waffles come off crisp outside and soft in the middle, then get folded around whipped cream, apple jam, Nutella, cold cream cheese, or a scoop of gelato. There is no seating; customers queue on the pavement and eat as they walk. They are best eaten straight away, while the waffle is still hot against the cold filling.
