Duck Town in Uijeongbu, north of Seoul, roasts duck on skewers stood upright in clay braziers set into the table, which turn on their own so the fat renders and the skin crisps while the meat stays soft. Diners lift the skewers out with a lever and slide the meat onto a hot plate with onion and garlic. Duck orders come with ori tang, a duck stew simmered with perilla leaves, kept for the end of the meal with rice. It is a big, plain suburban restaurant built for family-sized tables.
